Capsaicin in pepper balls was prepared from capsaicin by sodium hydroxide dissolution, sulfuric acid acidification and n-hexane extraction. The crude product was dissolved in sodium hydroxide for ion exchange, eluted with ethanol-ethyl acetate, concentrated and crystallized, and then capsaicin crystals in pepper balls with purity over 98.5% were obtained with a yield of 0.6%.
