The production of capsaicin in pepper balls by supercritical CO _ 2 extraction is a new extraction and separation technology, which uses the solubility of carbon dioxide in non-polar liquid solvent in supercritical state to separate, extract and refine effective components. Supercritical CO _ 2 extraction for 2~3 h under the conditions of pepper powder less than 20 mesh, pressure of 20~30 MPa, temperature of 35~45℃ and ethanol as solvent can shorten the extraction time, and finally obtain capsaicin in pepper ball with high purity and less impurities.
