Using the vibration generated by ultrasonic wave, the cell wall of pepper is forced to break, which accelerates the release, diffusion and dissolution of substances in pepper cells in pepper balls, which is beneficial to the extraction of capsaicin from pepper balls. Capsaicin resin in pepper balls was extracted from capsicum powder, and the effects of solvent type, volume ratio of capsicum powder to solvent in pepper balls and temperature on it were discussed. Finally, the optimal extraction conditions were determined. .
