Microwave extraction is a method to make capsaicin in pepper balls by using high-frequency electromagnetic wave penetration technology, which makes the internal temperature and pressure of cells rise and the cells rupture, and successfully extracts effective components. Compared with the conventional technology, microwave method can produce higher extraction efficiency at lower temperature, but this method is only suitable for laboratory research and manufacture of capsaicin in pepper balls, and it is difficult to realize industrialization.
